Thomas Jullien makes natural wines from his farmer friends' organic vineyards, which are surrounded by apricot and olive trees and full of music from September till June, which he believes uplifts the soul of his wines.‘Sur Le Fil’ is a blend of 90% Grenache and 10% Syrah that’s hand-picked, fermented in concrete tank with indigenous yeast and partially via carbonic maceration to soften the tannins and freshen up this chillable ‘glou glou’ guzzler. Wild strawberry and blueberry aromas follow through to the palate with a hint of garrigue. Bottled with 1 measly gram of sulfur per hectoliter, this hard-core natural wine pairs wonderfully with a Quiche Lorraine or roast chicken.
