Campania is home to the vast majority of Falanghina plantings, as it thrives in porous volcanic soils and the warm mediterranean climate. The San Salvatore is manually harvested and de-stemmed before cryomaceration then aged for 8 months in stainless steel tanks. A seductive, layered nose of tropical fruits tempered by notes of acacia leads to extraordinary minerality on the palate. A great wine for fresh cheeses like Burrata or sautéed clams.
