Surrounded by chestnut, oak, and wild cherry groves in the hills between the Alps and the Adriatic in Northeastern Italy, Ronchi di Cialla got their start reviving variet3als indigenous to Fruili. Certified as biodiversity friendly, they remain committed to using natural practices with minimal interference, having been one of the first winemakers in the region to adopt integrated agriculture with low environmental impact. This 100% Ribolla de Nera (aka Schioppettino) sees a one day carbonic maceration, followed by fermentation with local yeasts in stainless steel and three months of aging on the lees. Bright violets and spice on the nose are met by a medium body with flavors of ripe red cherry and plum, and a dry finish. Great alongside spiced Pasta e Fagioli, or salsiccia pizza.
