From the remote Strekov village, straddling the border of Slovakia and Hungary both geographically and culturally, Zsolt Sütó, a former pumpkin seed farmer, is a rising star in the natural wine world. Viola is a stunning, light-bodied, low-tannin blend of indigenous varietals St. Laurent and Blauer Portugieser that are hand-harvested and foot-stomped as whole bunches, then aged in neutral oak. Bottled unfined and unfiltered, with zero addition of sulfur. The result is a super chuggable red with loads of Amarena cherries, violets and bright, mouth-watering acidity. Perfect to wash down Slovakian sheep’s milk cheese dumplings or alongside a fresh fig salad with pistachios, basil, crumbled goat’s milk cheese and dried pumpkin drizzled with a balsamic glaze reduction!
