Appalachian Gap is a solar-powered, environmentally conscious craft distillery founded by a few Vermont home brewers who took a distilling class in Geneva, NY in 2010 and went back to VT to put their newfound skills to practice. The mash bill is comprised of 45% barley, 30% corn, and 25% rye that’s double distilled for added richness and smoothness. They use three types of barrels, ex-bourbon, new American oak and ex-port wine barrels to contribute unique flavors that are blended together in a complex, early-American style whiskey. The nose has inviting scents of cedar, mint, dried fruits, and vanilla. The palate displays hints of maple, char, walnuts and orchard fruits.
