This 100% Grechetto is produced on the Vini Conestabile estate in Umbria that has family ownership dating back to the middle ages. Due to a gap in wine production in the latter half of the 20th century, the land was never touched by chemical fertilizers, and continues to practice Organic farming today. The grapes see 20 days of skin contact before aging in fiberglass tanks and bottling without fining or filtration. Medium bodied and dry, expect notes of sandalwood and under-ripe tropical fruit and a gripping tannic finish. Perfect with grilled garlic prawns or a funghi pizza.
