Made by the Podkubovšek family and inspired by the 12th century French Carthusian monks who first planted Pinot Noir and Chardonnay vines in this region of northeastern Slovenia, this is a coferment of 70% Pinot Noir, 20% Sylvaner, and 10% Pinot Gris. The grapes are grown organically and are hand-harvested, fermented in open-top tanks with native yeasts, and pressed for spontaneous malolactic fermentation before unfiltered bottling. The wine is fresh and light bodied with aromas of cranberry and fresh herbs, with notes of strawberry and black cherry. Perfect served chilled alongside simple, monk-like foods, such as a vegetable pot-pie, or oven roasted salmon.
