This co-ferment is predominantly made up of Mando, a nearly-extinct ancient varietal re-discovered in the 1980s, Sumoll, another rare varietal known for its distinctive cherry flavor, and Xarel-lo, all of which ferment together in stainless steel. Ripe cherry and plum meet eucalyptus and black pepper in this biodynamically-farmed red, bottled unfined and unfiltered.
