While hand-harvesting they do as many as three passes, collecting only the best of their crop at optimal ripeness followed by a minimal, low-intervention process the rest of the way. The grapes are pressed and naturally fermented in stainless steel tanks before spending 6 months on its fine lees. Its nose offers clean, vibrant tart apple and citrus notes. Dry on the palate, Das Trocken is driven by its crisp acidity with pear, apricot, and tart lemon flavors as well as a distinct mineral note evocative of freshly wet pavement. Drink alongside Drunken Noodles (Pad Kee Mao) or a spicy chicken sandwich from Popeyes, the new kid on the block!
