From 200+ year old vines (that was not a typo!) that are believed to have descended from those brought to Mexico by Hernan Cortes in 1520, Roberto Henriquez makes all of his red wines from the Pais grape. His Pais Verde is bright with tart red cranberries and slight kombucha-like funk. It’s light-bodied and finishes with notes of fine herbs and sandy salinity. Great with a chill and spicy phat see eiw.
