L’imparfait is a collaboration between Québécois restaurateur David McMillan and a small winery in Prince Edward County called Hinterland. La Pioche is a blend of Savagnin that sees a 14 day whole cluster soak before fermentation and Chardonnay from Familia Ramirez. The blend and fermentation occur in neutral mature oak barrels. It is a medium bodied white with fresh mineral notes of saline, melon, chamomile, and pear. Enjoy it alongside fresh seafood or grilled artichokes.
