This stunning, funky, and tannin heavy skin-contact wine comes from a Canadian based collaboration between Québécois restaurateur David McMillan and Hinterland Winery, who organically farm vines they planted in 2003. The grapes, Gewürztraminer, Savagnin, and Viognier, are fermented separately with 21 and 14 days skin contact respectively, are then blended and aged in mature oak barrels. The wine shows notes of apricot, wild flowers, baked pear, and bitter citrus peel on the finish. While certainly a wine that is full of structure and personality, this bottling is also a great food wine, we suggest accompanying it with grilled eggplant or Moroccan lamb.
