CloseGrown on the slopes of Mount Etna following sustainable, organic and non-invasive viticulture practices, this sparkling Catarratto is light, fresh, and though not quite explosive, it’s clearly volcanic. Made by fourth-generation winemaker, Flavia Rallo who carries the legacy of a family that has tended to Sicilian vines since at least 1860. It’s a precise spumante that's hand harvested, native yeast fermented, and lightly fined and filtered prior to bottling. The aromas are lively with hints of orange blossom, fresh-cut citrus, and jasmine. Its delicate bubbles deliver a palate with notes of honeycrisp apple that flows into an elegant grassy, herbal, lava-driven finish. A versatile wine that can be paired with anything from sushi to eggplant risotto.
