Winemaker Jean-Marie Rimbert drew the “Tan Little Pig,” this quaffable rosé’s namesake, himself, as a way to communicate that if you can’t be on the Riviera with the other tourists, the wine might do the same refreshing trick. The Cinsault, Grenache and Syrah that make this wine are destemmed and fermented with natural yeast on the skins for 36 hours. This process imparts the wine’s bright pink color, and notes of tropical fruit, red berries, earth and the “scrubland herbs” of its native Languedoc Roussillon, like thyme and bay leaves. In this region, the rose might be paired with squid stuffed with vegetables and breadcrumbs!
