Domaine Giachino is located at the base of Mt. Granier, where, in 1248, 500 million cubic meters of limestone spilled into the valley, destroying five nearby villages. In the wake of this tragedy, an amazing terroir for vines emerged. A number of centuries later, the Giachino family began farming on these foothills, where brothers Frédéric and David now produce a variety of biodynamic wines. Their Monfarina is a blend of Jacquère, Verdesse, and Mondeuse Blanche that co-ferment in stainless steel on the lees for 12 months. Medium-bodied and elegant, this wine has notes of honeysuckle, fine herbs, and a slight oxidative note that settles into a refreshing, mineral-driven acidity. Drink with fish and chips or a tofu katsu sandwich.
