Henri Ramonteu—a highly respected winemaker in the Jurançon— is a fanatic when it comes to quality. L'Eclipse is his blend of the indigenous Gros Manseng with the almost extinct Lauzet, from vineyards that are scattered among the foothills of the Pyrenees. The bunches are harvested by hand, de-stemmed then gently pressed with a pneumatic press to ensure purity of fruit. After fermentation, the wine spends 5 months of the lees which adds texture and complexity. It undergoes only 20% malolactic fermentation to maintain racy acidity with a dash of citrus peel bitters. White flowers, stone fruits and minerality drive this unique, medium-bodied, tangy white that's versatile enough to pair with poultry or their local terrines, pates, confits and cheeses like Petit Basque, a semi-hard, sheep's milk cheese.
