Clos Cibonne crafts a unique rosé that’s in a category of its own. Following the sustainability principles of Lutte Raisonnée and made primarily from a rare grape called Tibouren with about 10% Grenache, the wine is aged on the lees under flor (the special yeast that forms in fino sherry casks) for a year in 120 year old 5000 liter foudres! The result is a hypothetical cross between a rosé, orange wine and fino sherry. The nose hints at orange zest and white flowers with baking spice and almond notes. The palate is cool, complex and delicate with evident brininess, wild berries and quince. Pairs perfectly with red mullet fillets or Provencal bouillabaisse.
