Bruno Dubois, having learned under the tutelage of the late Marcel Lapierre himself, established his domaine in Saumur in 2002. He currently farms just 3.5 hectares of demeter certified biodynamic vineyards, ranging in age from 45-65 years old. The vineyards are interspersed with native brush and trees, as well as bird houses, bat shelters and bee hives, creating an ecosystem of extraordinary biodiversity. From this environment, he produces Plume, 100% Cabernet Franc from two 1ha parcels. It’s hand harvested and fermented with native yeast in concrete tanks, from juice that is 50% direct press and 50% macerated for one week, where it sits for 6 months with no punch downs or pump overs. The result is a vibrant, fresh Cab Franc with green and white pepper aromas, pure blackberry flavors with earthy and limestone minerality, supple tannins and balanced acidity. Incredibly versatile, it pairs wonderfully with roast chicken and freekah, chevre and charcuturie, or give it a slight chill and serve with poached salmon!
