Situated in the hills overlooking the Gulf of Castellammare, 40 miles west of Palermo, Bosco Falconeria achieved organic certification in 1989 and is currently run by Natalia Simeti whose parents resuscitated the winery in the mid-’70’s. At 250 meters above sea level with very fertile, limestone-rich soil, their naturally-made wines are precise and chiseled. Cataratto, formerly considered an innocuous, high-yielding grape for commercial Marsala, has flourished under Natalia’s care. Hand-harvested, gently stomped and spontaneously fermented on skins for 3 days, in temperature-controlled steel tanks and bottled with no added sulfur. Peregrino is a tangy, moderately orange wine with beautiful citrus and floral aromas, racy acidity and subtle tannins on the dry finish. Pairs wonderfully with stinky cheese or strong seafood dishes like linguine with clam sauce.
