This unique Alsatian blend of 50% Pinot Blanc, 25%Pinot Gris, and 25% Pinot Noir (Blanc de Noir) comes from Mathieu Deiss, the son of acclaimed winemaker Jean Michel Diess and their vineyard in the Kaysersberg Valley. The Pinot Noir done in a Blanc de Noir style gives this wine a Champagne-like roundness with a medium plus body. The palate shows flavors of green apple, poached pear, and lime zest. Pair with an onion tart or a creamy cheese like muenster.
