Publius is made up of 100% Asprinio d’Aversa, a rare varietal indigenous to Campania known for its bracing acidity. The vines are Alberate-trained (meaning they grow amongst the branches of trees, up to 50 feet in the air) and require ladders to complete the harvest, all of which is done by hand. Lively, lean, and herbaceous, with a hint of sun-dried citrus peel, this pet nat is rich with juicy acidity and fine tannins on the finish. Drink with Cantonese-style steamed fish or marinated bocconcini.
