2019 Domaine Mann Sylvaner Le Mouton Bleu - Alsace, France (750ml)

Practicing organic since 2004 (certified in 2008) and biodynamic viticulture, Domaine Mann produces this exquisite Sylvaner from 50+ year old vines planted on granite, limestone, and sandstone. Harvested by hand and slowly pressed in whole bunches, it's fermented with indigenous yeast then aged on the lees for a full year in stainless steel. Medium-bodied and crisp with pronounced minerality, it has an expressive nose of pear and quince followed by puckery green apple and fresh pineapple flavors on the palate. Pairs well with a pungent Alsatian Münster or risotto with wild mushroom and parmesan.
