“Das Trocken” means “it’s dry,” and if you have bad associations with sticky-sweet Riesling, this bottle is here to change your mind. The Ebert brothers, who make this wine in the Nahe region of Germany, follow a natural wine philosophy, “as much as is necessary, as little as possible,” meaning they work with minimal intervention in the field as well as the winery. The result of their labors is organically-farmed, hand-picked Riesling, a clean, dry crisp white wine with notes of Granny smith apple, honeysuckle and that telltale ‘gout de petrol’ or whiff of fresh road tar, without which, it wouldn’t be a varietally correct Riesling, right? Try it with currywurst, or soft pretzels with spicy mustard!
