Surrounded by chestnut, oak, and wild cherry groves in the hills between the Alps and the Adriatic in Northeastern Italy, Ronchi di Cialla got their start reviving varietals indigenous to Friuli. Certified as biodiversity friendly, they remain committed to using natural practices with minimal interference, having been one of the first winemakers to adopt integrated agriculture with low environmental impact. This white is made of 100% Friulano (fka Tocai Friulano), fermented with native yeasts and aged for three months on the lees, a technique that adds complexity, fermentation flavors and a bit of body to the wine. Nonetheless, it's a light-bodied wine with aromas of zesty lemon and green pear. The palate is crisp with stone fruit and citrus flavors, distinct minerality and a subtle bitter almond finish. Drink as an aperitif with Fontina cheese and Marcona Almonds, or alongside Spaghetti alle Vongole.
