In 2011, the Costanzo family began a painstaking renovation of the dormant 19th century Palmento winery and cellar, bringing it back to its original form and function. Farmed organically from their 12 ha of vines up to 800 meters altitude in the Santo Spirito Cru, this Etna Bianco blend of 70% Carricante and 30 % Catarrato, is stunning and precise. The grapes are pressed softly using the ancient winery’s original millstone, the juice is gravity fed to the fermentation tanks where more modern techniques are employed. The wine is then aged in stainless steel tanks for 6 months to maintain freshness and purity. Delicate floral aromas are followed on the palate by volcanic mineral notes, ripe but restrained stone fruit and a savory touch of bitter grapefruit on the finish. Pair it with Sicilan specialties like lentil escarole (endive) soup or broiled red mullet on a bed of orzo.
