Les Enfants Sauvages is a brother-sister duo that took their name and inspiration from the Doors ‘Wild Child’. Only five kilometers from the Mediterranean, their vineyards enjoy a cool, breeze and they train their vines using the gobelet method to ensure even ripening and protection from the hot, southern French sun. Che Chauvio (loosely translated to ‘if you only knew’ in the local Occitan dialect) is a blend of 50% Syrah which is gently pressed and 50% Cinsault which is thrown into the Syrah whole cluster, to suppress the tannins and enhance the freshness of the wine. The result is a lovely, finesse-driven red that’s atypically light for the region and can even take a slight chill. Delicate, fresh cherry and strawberry flavors are complemented by subtle mineral and earth notes, crisp acidity and a dry finish. Pairs wonderfully with pizza, cheddar cheeseburgers or a Reuben sandwich with Russian dressing!
