Abandoned for twenty years, this 17th century winery’s period of neglect washed away all previously used herbicides and pesticides. Now fully biodynamic and Demeter certified, Gut Oggau winery produces natural wines each vinified with grapes from a single plot. Timotheus is a blend of 70% Gruner Veltliner and 30% Weissburgunder of which 30% of the juice spends three weeks on the skins. Fermented with native yeast in old 500 liter barrels with no batonnage, unfined, unfiltered and with zero sulfur added, this wild, cloudy pale orange wine has flavors of stone fruit, citrus peel, a hint of honeysuckle with pronounced minerality and salinity. Moderate acidity and good grip give the structure needed to pair well with rich pork dishes such as schnitzel or bratwurst with sauerkraut.
