Fazio’s 100% Grillo, believed to be the progeny of Catarratto and Zibibbo (aka Moscato di ‘Alessandria), comes from selected estate vineyards down the slope from the ancient, picturesque walled village of Erice in Western Sicily. The vineyards are organically farmed and the solar-powered winery is completely carbon neutral. Grapes are hand-harvested and destemmed. A cold maceration of the skin is done prior to a gentle press and a slow temperature controlled fermentation. Incredibly fresh, Aegades showcases notes of ripe exotic fruit blended with citrus, green apple and a hint of salinity. Elegant and well-balanced, it pairs perfectly with seafood risotto or local goat cheese.
