This cuvee is a blend of fruit from the Eola Springs, Mahonia and Illahe vineyards that Evesham Wood uses for their single vineyard Pinots. All of the vineyards are dry farmed and sustainable or stricter. The grapes are hand harvested, hand sorted 100% de-stemmed and fermented in 1.25 ton open top fermenters which encourage a whiff of the barnyard in the wine. Earthy yet fruit forward with pronounced dark plum and cherry flavors. Pairs perfectly with chicken and morels.
