Ernest Vineyards is a Northern Sonoma county Winery that focuses on cool climate production around Sonoma and the Mendocino Coast. Their Edaphos line represents wine made from varietals rarely grown in California such as this Barbera, typically produced in Italy. The grapes are grown organically and harvested by hand before fermentation in stainless steel and aged in concrete egg for 9 months, followed by oak for 6 months. The wine has a plush mouthfeel, with juicy notes of black plum, baking spice, and earth, followed by a dry tannic finish.
