Azimut is a line of easy-going, gulpable, table wines from the Suriol family in Catalonia, Spain. The family has been making wines in the Cellars de Can Suriol del Castell since the 1600’s, always biodynamic and with little intervention at bottling, and with an organic certification since the 1990’s. Azimut Negre is a blend of 40% Ull de Llebre (Tempranillo), 20% Garnatxa, 20% Monastrell, 10% Syrah, and 10% Samso (Carignan), the grapes are vinified in stainless steel for 20 days with indigenous yeasts, and then in concrete for 8-15 months for malolactic fermentation. The result is a rich, medium-plus bodied, approachable wine with a dark red fruit and earthy palate of black currant, mulberries, and tobacco leaves. This is a versatile partner for many food pairings, but we suggest enjoying it with stuffed poblanos roasted over an open flame.
