CloseEstablished in Mercury, in the heart of the Burgundian Côte Chalonnaise, the ancient fortified vineyards are cultivated by Anne-Laure Hernette who took over from the Antonin Rodet family that had been growing vines since 1882. The juice from Chardonnay grapes ferments in vats in order to maintain the purity and bright aromas of the fruit, afterwards it ages in oak barrels on lees for several months. A delicate nose with aromas of honey, flowers, and dried fruits make way to a fresh and lively palate that shows candied lemon, toasted almond, and flower notes. This is a perfect wine to pair with charcuterie, or try it alongside scallops or salmon.
