Siflogo is a small organic wine “workshop”, which was founded in 1994 by Dionysis and Maria Papanikolopoulos, in the small, mountainous village Platystoma, on the island of Lefkada in the Ionian sea. Organic viticulture of indigenous grapes like this Vertzami has been a family tradition dating back many generations. Ungrafted vines struggle to grow in the dry, poor, limestone soils, which have never seen any harmful intervention, but produce extraordinary, intense fruit. Farming and harvesting is done by hand. Fermentation takes place with native yeast in stainless steel in their underground stone cellars. Vertzami is known for its almost black color and aromatic intensity, shown here in all its traditional purity. Dark berry aromas and flavors meld with forest herbs to create this unique, intense full-bodied red with a firm, dry tanninc finish. Pairs perfectly with a succulent rosemary rack of lamb.
