Crisp, dry and medium-bodied, this stunning Vermentino is made following organic practices in the vineyard. They use a combination of orange zest, horsetail, and clay to dry the vine leaves in order to control rot and mildew. It’s then hand-harvested and fermented with natural yeast. The result is a white that’s elegant and unique, with crisp acidity, minerality and ripe flavors of apricot, peach and even a hint of pear. It’s very well-balanced and pairs wonderfully with most Mediterranean seafood dishes but solid enough to stand up to Zuppa Corsa, a traditional Corsican vegetable minestrone in a ham hock stock.
