This crisp, dry and medium-bodied, Vermentino is produced using organic practices. A mix of orange zest, horsetail, and clay dry the vine leaves in order to control rot and mildew. Hand-harvested and fermented with natural yeast, the result is a white that’s elegant and unique, with crisp acidity, minerality and ripe flavors of stone fruit. It’s well-balanced and pairs with most Mediterranean seafood dishes but is solid enough to stand up to Zuppa Corsa, a traditional Corsican ham and vegetable minestrone.
