Domains des Fores has been run by the Branchereau family in the Savennieres commune since 1890 and has in more recent years returned to pesticide and herbicide free cultivation. The Chenin Blanc grapes are grown on a butterfly shaped clos, or vineyard, and harvested once golden or when they have a touch of noble rot to make them more full bodied. The wine is then barrel aged for around 11 months after partial malolactic fermentation. The result is a clean dry chenin with a silky texture and notes of citrus, ripe melon, and stone fruit balanced with limestone minerality and a crisp finish. A classic pairing for an array of seafood, this wine can also stand up to Pork Loin.
