Rinazzu by Salvo Foti, the undisputed godfather of Mount Etna, is a blend of 80% Nerello Mascalese and 20% Nerello Cappuccio from 20 -40 year old vines at about 650 meters above sea level that are cultivated by hand with only natural products and in accordance with the lunar phases. Harvested in mid-October and fermented in stainless steel tanks, it's then aged for about 12 months in 225 and 500 liter old barrels. Medium-bodied with intense wild black cherry and raspberry flavors, herbaceousness, mouthwatering acidity and firm, grippy tannins from the skins and the ash soils from where it emerged, this stunning wine pairs perfectly with Pasta Alla Norma or with Sicilian pork and saugage ragu.
With the zeal of an amateur anthropologist and archaeologist, Salvo researched and preserved ancient vinicultural and viticultural techniques such as the Alberello (“little tree”) training methods on chestnut stakes in a pattern of five called a Quincunx by the Ancient Greeks who introduced it to Mt Etna. He also resurrected old, gravity fed stone wineries called Palmento which are outlawed for commercial winemaking in the EU.
