Jean-Michel went to work side by side with his father in 1978 and started his own domain in 1990. He works hard to preserve the soil, using no pesticides, and employs traditional vinification methods — a practice known in the region as lutte raisonnée, or the rational struggle. Based in Meursault, one of the triumvirate of the most prestigious appellations for white Burgundy, his wines are regal in nature and very precise. Made from 55 year old vines found in four parcels, this Chardonnay is fermented in neutral oak and matured in bottle for 12 months. The 2015s are ready to drink and showing incredibly well, with notes of white nectarine, apple and grapefruit pith. A subtle hint of oak lurks in the background. Though perfect to ponder on its own, it pairs very well with lobster in beurre blanc or a blanquette de veau.
