2015 Champagne Pertois Moriset Les Hauts d'Aillerands Extra Brut Grand Cru Blanc de Blancs - Le Mesnil-sur-Oger, Champagne, France (750ml)

This is a minuscule release of under 100 cases from two plots of 100% Grand Cru Chardonnay in the Lieu Dit of Les Hauts d'Aillerands within the prestigious village of Le Mesnil-sur-Oger. The vineyards were planted in 1997 and 2010 with grasses as cover crops that are fully ploughed every winter to enrich and aerate the soil. Primary fermentation takes place half in small, and half in large, oak barrels over 8-10 months before spending 6 years in bottle with no dosage prior to disgorgement in Autumn 2022. The ripeness of the grapes combined with the modest use of oak and the extended time on the lees give this wine a beautiful richness and complexity with a hint of toasted brioche that's balanced by the razor sharp acidity due to blocked malo-lactic fermentation. Lovely limestone minerality emerges on a crisp finish that makes this wine pair so well with crudo, ceviche and sashimi.
