A biodynamic blend of 60% Syrah, 30% Merlot, 5% Grenache, and 5% Cinsault, the ‘Serre de Berty’ from Chateau de la Selve is a real beauty. It’s hand harvested from low-yielding, old gnarly vines, fermented spontaneously for 6-8 weeks and aged for 24 months in large ex-Burgundy barrels. The nose has aromas of red and black fruit with a little funk, followed by a palate that’s dominated by barnyardy dark fruit with hints of licorice and a savory, black olive note. Slightly gamey, the finish is long, spicy, and peppery, with a firm tannic finish. Pair with a classic rack of lamb or a strong cheese like Reblochon.
