<p><strong>Anima Negra &#8211; A Silk Purse from a Sow&#8217;s Ear: </strong>Callet, the most widely planted indigenous varietal on the island of Mallorca was once considered a lowly step-child of a grape &#8211; barely capable of making a simple peasant wine. Little, if any, ever left the island until 1994 when Miguel Angel Cerda (on the right) and his brother-in-law founded Anima Negra (Black Soul) and applied their knowledge of horticulture, viticulture and wine making to Callet.  The result is three stunning, world class reds from Callet that are enjoyed in the finest restaurants in the world, including the legendary Catalan restaurant el Bulli.<br />
